We made it to Friday! What a week it has been. Yesterday, my daughter got her first bad grade on a test. That was quite the adventure. I was debating what I wanted to share with you today and decided at the last minute that I had to share the Instant Pot whole chicken that I made for dinner this week. Since it was so crazy, I forgot to take the chicken out in time to defrost for dinner. I was in a panic and really did not want to make a trip to the store to pick up something. My creative juices got flowing and an amazing meal was put on the table, without having to go grocery shopping. If you still don’t have an Instant Pot, you must order one stat. It will literally change your life.
Before we get to the recipe, let’s talk about grocery shopping. I absolutely hate it! Being a working mom, I have no choice but to go on the weekend. That makes it all the more unenjoyable. As a result, I try to buy as much as I can online. It is awesome to have the essentials delivered right to your doorstep. I can’t believe it took me so long to discover the joys of online shopping. It not only saves my family a lot of time each week, it also saves us a lot of money. Yes, I am an Amazon Prime junkie. I am also a big fan of Vitacost. They have a lot of organic and gluten free options that are A LOT cheaper than getting from the local grocery stores. Here are some of my favorite things that I like to buy online.
Orgain Organic Protein Powder – Considering we are an active family, we go through a lot of this stuff. The kids love it. I even make them popsicles in the summer with this powder.
Larabars – I prefer to make my own healthy snacks, but Larabars are a nice alternative when we need something quick. They are gluten-free and are naturally sweetened with dates.

Apple Cider Vinegar – This is another staple in our home. I use it in cooking and to make salad dressings. My husband and I also take 1 Tablespoon of apple cider vinegar a day in warm water. There are so many wonderful health benefits of apple cider vinegar and I find that it definitely helps keep my stomach in balance.
So, as promised, here is the chicken recipe. Truthfully, this recipe happened on accident and I really thought it was going to be a fail. We had planned on roasting a whole chicken but it was still frozen. I almost always throw frozen chicken breasts in the Instant Pot, so I thought why not a whole chicken! Panic set in when I first took the lid off the pot. I only buy organic chicken and they do not come cheap. I was pleasantly surprised that the chicken was actually cooked. It was tender and juicy and the herbs were infused throughout the chicken. We liked it better than my traditional roast chicken. The kids could not get enough of it, which is always an added bonus!
- 1 whole chicken, 3-4 lbs
- 1 onion, quartered
- 1 lemon, halves
- 1 Tablespoon olive oil
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
- 3 sprigs of fresh herbs; rosemary, thyme and sage
- 1 cup chicken broth or water
- Place whole chicken on rack inside Instant Pot.
- Put lemon and quartered onions at the bottom of the pot.
- Cover chicken in olive oil and the sprinkle with salt and pepper.
- Place fresh herbs on top of chicken.
- Add one cup of water or broth.
- Place lid on Instant Pot and press the Poultry button. You can also use the manual setting on high pressure.
- Change the timer for 35 minutes for a thawed chicken and 50 minutes for frozen.
- Let the pressure cooker release naturally.
- Remove from pressure cooker and let stand for 5 minutes. If you like the crunchy skin, you can preheat over to 450 and put the chicken in the over to "crisp" up for about 5 minutes. I would decrease the pressure cooker time by a few minutes if you want to go that route.
